Beaman Family, Dessert
Dough:
1 c. shortening
4 1/2 c. flour
2 c. brown sugar
1/2 t. baking soda
3 eggs
1/2 t. cinnamon
Filling:
1/2 lb. dates(unpitted)
1/2 c. sugar
1/2 c. water
Cream shortening, sugar and gradually add well-beaten eggs.
Sift dry ingredients and add to mixture.
Chill Dough.
Roll out about 1/4" thick on a cloth board.
Cook filling mixture until thick.
Cool and add 1/2 c. chopped nuts.
Spread this mixture on dough and roll into jelly roll.
Freeze.
Slice and bake in 350 degree oven for 12 to 15 minutes.
Cookies will be very soft until cooled.
I particularly like to just eat this mixture uncooked, straight from the freezer. So I always make sure that I use really fresh eggs.
